White pizza with winter vegetables

  • 150 g butternut pumpkin
  • 200 g button mushrooms
  • 40 g fresh spinach
  • 150 ml soy cream
  • 12 g garlic
  • 1 pinch salt
  • 1 pinch pepper
  • 2 teaspoons olive oil
  • Water
  • 220 ml warm water
  • 2 tablespoon olive oil
  • 1.5 teaspoon sugar
  • 1.5 teaspoon dry yeast
  • 1.5 teaspoon salt
  • 400 g flour



Pour the water, olive oil, cane sugar and yeast into the i-Companion XL bowl with the kneading/crushing blade attached. Lock the lid with the cap and set the appliance to speed 1 at 40°C for 10 minutes.

Add the flour and salt, lock the lid without the cap and then set the mixer to speed 4 for 5 minutes until you have a smooth and even dough.

Leave to rest for 1 hour in the mixer bowl.

Brush the butternut pumpkin under running water to remove soil without damaging the skin. Cut the squash in half and remove the seeds. Cut it into strips.

Pour 700 ml of water into the mixer bowl and place the squash pieces in the steam basket. Lock the lid with the cap and set it to P2 Steam mode for 5 minutes.

Check it is cooked by using the tip of a knife.

Cut off the earthy part of the mushroom stems. Wash, dry and cut them into strips.

Wash the spinach then dry it.

Peel and chop the garlic. Mix the cream with the garlic, salt and pepper.

Spray the Tefal Easy Fry & Grill Deluxe air fryer basket with oil. Shape the pizza base by hand, and place it in the basket.

Spread the cream. Place the spinach, butternut pumpkin slices, and mushrooms. Season with salt and pepper. Add a drizzle of olive oil.

Set the air fryer on Grill mode and cook for 5 minutes at 250°C or until golden brown. Repeat with remaining ingredients.

If you're looking for a flexitarian option for this dish, add crispy cured ham. You can also add slices of goat's cheese and crushed hazelnuts.
