Ingredients

  • 20g butter
  • 1 onion, chopped
  • 2 large Desiree potatoes, cut into sixths
  • 400g jarred sauerkraut
  • 100g piece of speck cut into lardons
  • 100ml riesling
  • 2L chicken stock
  • 100ml thickened cream
  • pinch nutmeg
  • pinch white pepper
  • pinch salt

1. Select the program ‘Stir Fry’, press the timer dial and set it to 5 minutes. Press start. Melt butter and add the onion, once softened add potato, sauerkraut and speck. Coat everything in the butter. 2. When the timer is up, close and fully lock the lid and select the program ‘Soup’. Press the timer dial to reach 15 minutes. Press ‘Start’. 3. When the time is up, press the ‘steam release’ button to fully release the pressure before opening the lid. 4. While the soup is cooking, whisk the cream, nutmeg and white pepper together to stiff peaks. 5. Using a masher, mash the potatoes into the soup to form a chunk-style texture. Check seasoning. 6. Portion into bowls and serve with whipped cream.
