Weigh out the oil in a container and set aside.
Pour in water up to the 0.7 L level of the i-Companion XL bowl and place in the steam basket with the eggs inside. Lock the lid with the cap and set it to the P1 Steam mode at 100°C for 20 minutes.
Set aside the eggs. Empty the bowl and let it cool.
Put the egg yolk, mustard and vinegar into the bowl with the Mixer attachment. Lock the lid without the cap and set it to Speed 7 for 2 minutes and 30 seconds. Drizzle in oil through the opening in the lid.
Remove the shells from the eggs and cut 1/3 of the tops off.
Place the egg yolks in a bowl and crush them with a fork. Add the mayonnaise and mix together.
Pour the mixture into a piping bag and decorate the eggs.
Peel the carrot and cut it into rounds. Cut out a small beak and some feet, then add them to the eggs. Use 2 peppercorns for the eyes and serve.
