Ingredients

  • 150 g wheat flour
  • 0.75 teaspoon Espelette pepper
  • 1 pinch of salt
  • 1 sachet baking powder
  • 30 ml lemon juice
  • 70 ml olive oil
  • 2 eggs
  • 115 g double concentrated tomato paste
  • 18 quail's eggs
  • Sprouted seeds
  • Water
  • Espelette pepper
  • 3 avocados
  • 30 ml lemon juice
  • 1 pinch of salt

Preparation

Preheat the oven to 180°C.

Add the flour, chilli, salt and baking powder into the mixer bowl with the Kneading/crushing blade attachment. Add the lemon juice, oil, egg and tomato paste. Lock the lid with the cap and set it to P1 Pastry mode for 2 minutes and 30 seconds.

Divide the batter between the cups in a mini muffin tin.

Bake for 10 minutes.

Pour in water up to the 0.7 L level of the mixer bowl and place in the steam basket with the quail eggs inside. Lock the lid with the cap and set it to the P1 Steam mode for 10 minutes.

Cut the avocados in half, remove the stones and take out the pulp.

Add the avocado, lemon juice and salt into the mixer bowl with the Ultrablade knife attached. Lock the lid with the cap and set it to Speed 9 for 30 seconds.

Pour the guacamole into a piping bag with a fluted nozzle.

After taking the cakes out of the oven, leave them to cool on a rack. Pipe out a little guacamole on top and serve with a quail egg and some sprouted seeds. Sprinkle with Espelette pepper.
