Biltong (South African Dried Beef)

Ingredients
- 500g Stir Fry beef strips
- 30g Coriander seeds
- 5g Black Pepper Corns
- 10g Salt
- 50ml White Vinegar
- 1 tbsp Worcestershire Sauce
Method
- In a food processor, pulse the coriander, salt and pepper for 10 seconds
- In a large bowl add the cracked seeds, beef strips, vinegar and Worcestershire Sauce
- Mix well and rest in the fridge for 24 hours.
- After 24 hours, drain the liquid from the beef.
- Place strips in the air fryer and dehydrate at 55 ̊C for 5 Hours
- After two hours, open the air fryer and stir, breaking apart strips that may have stuck together.
- Allow to cool for a few hours before eating.
Tip: Biltong should last for around 10 days in a cool climate. In a warm climate store in a fridge.
