Black Rice Salad with Chorizo & Prawns

Smoky chorizo, spiced prawns & zesty veg tossed with bold black rice. Fresh, vibrant and packed with flavour in every bite.

Ingredients

  • 2 cups black rice
  • 200g green prawns
  • 1 tbsp cajun seasoning
  • 2 chorizos, sliced
  • 1 bunch coriander, chopped
  • 1 small can of corn kernels, drained
  • 1 punnet cherry tomatoes, sliced
  • 1 small red onion, finely chopped
  • 1 large avocado, cubed
  • 1 garlic clove, finely minced
  • Juice of 1 large lime
  • 2 tbsp olive oil
  • Salt and pepper to taste

Method

  1. Add black rice to the bowl of your Tefal Rice Master & Slow Cooker RK818 and fill the water up until the 2 cup Brown Rice indicator line (black rice is similar to brown rice in terms of cooking time). Select “Tasty Rice” button on the left hand side of the control panel and then select “Brown Rice”. Press “Start” button to start the cooking program. Once finished cooking, spoon rice out into a bowl to cool.
  2. Toss the prawns in the cajun seasoning until well covered and fry in a hot frypan until cooked. Set aside. In same frypan, fry the chorizo slices turning over until both sides are browned and crispy. Set aside (if you have an air fryer you can place both prawns and chorizo slices in the air fryer and air fry at 180 degrees for 10 minutes or until prawns and chorizo are golden and crispy).
  3. In a separate bowl gently combine the coriander, corn kernels, cherry tomatoes, red onion, avocado, garlic, lime juice, olive oil and salt and pepper. Once black rice has cooled, gently mix through the salad. Garnish salad by layering chorizo slices and prawns on top. Serve.
