This Breakfast Frittata combines roasted butternut, crispy bacon, and crumbled feta in a savoury egg base, air-fried to perfection for a delicious and hearty start to your day.

    Ingredients

    • 200g diced butternut
    • 3 rashers streaky bacon
    • ½ onion, diced
    • 1 tbsp olive oil
    • 1 tbsp butter
    • 6 eggs
    • 100g crumbled feta cheese
    • 1 tbsp chopped parsley
    • ¼ tsp garlic salt
    • ½ tsp Dijon mustard
    • Salt and pepper

    Method

    1. Air fry the diced butternut at 200°C for 12 minutes, then set aside.
    2. In a pan, fry the onion and bacon in the oil and butter.
    3. When cooked, add the feta and butternut, stir and remove from the heat.
    4. In a large bowl, whisk the eggs with the parsley, mustard, garlic salt and seasoning.
    5. Stir in the fried mixture and pour these into the greased Tefal cake pan accessory.
    6. Bake at 160°C for 25 minutes, then serve.
