Ingredients
- 1 quick pizza dough
- 50 g extra-fine semolina or spolvero (for dusting)
- 40 g mayonnaise
- 20 g ketchup
- 1 teaspoon mustard
- 0.5 teaspoon fresh parsley, chopped
- 0.5 teaspoon fresh chives, chopped
- 50 g grated mozzarella
- 30 g grated cheddar
- 100 g minced beef
- 1 teaspoon white sesame seeds
- 20 g fried onions
- 50 g sweet and sour gherkins, sliced
Method
- Make the quick pizza dough recipe.
- Make the burger sauce recipe. In a small bowl, mix together the mayonnaise, ketchup, mustard, parsley and chives.
- Preheat your oven (30 minutes on the highest setting).
- Use extra fine semolina (or spolvero) to sprinkle over your work surface and the underside of the dough. This will prevent the dough from sticking to the work surface and make it easier to transfer. Roll out your dough, making sure it is less than 30 cm in diameter.
- Sprinkle the pizza peel lightly with extra fine semolina. Carefully slide the peel under the pizza dough or rotate the dough onto the peel.
- Add the toppings once the pizza is on the peel: spoon the burger sauce into the centre of the pizza (around 70 g per pizza). Spread it over the entire surface.
- Sprinkle the mozzarella and cheddar over the pizza. Add the minced beef, scattering it all over. Sprinkle the sesame seeds around the edges of the dough.
- Place the pizza in the oven and cook for around 90 seconds, turning it regularly with the knob on the side of the oven to ensure even cooking.
- Using the peel, remove the pizza from the oven and slide it onto a serving plate. Add the gherkins and a few fried onions. Slice, serve and enjoy!
Tips:
- If the sesame seeds don't stick well to the edges of your pizza, you can moisten it with a brush to help the seeds stick.
- If you have an infrared thermometer, measure the cooking temperature on the rotating stone: 380-430°C.
