Ingredients
- 2 tbsp vegetable oil
- 2 garlic cloves, minced
- Knob of ginger, minced
- 2 green onions, sliced
- ¼ cup red curry paste
- 1 x 270 ml can coconut milk
- 1L chicken stock
- 2 tbsp soy sauce
- 2 tbsp fish sauce
- 1 tbsp brown sugar
- 1 bunch baby bok choy, quartered
- 300g green prawns
- 250g rice noodles or udon noodles
- 1 red chilli, sliced
- 1 bunch coriander, chopped
- 1 lime, quartered
Method
- Add oil, garlic, ginger and green onions to the bowl of your Tefal Rice Master & Slow Cooker RK818. Close the lid and select “Soup”, then press “Start” button to start cooking. The rice cooker will take about 5-6 minutes to heat up the bowl and start lightly browning the ingredients. Open the lid and add the curry paste, stirring to combine for another minute.
- Add the coconut milk, chicken stock, soy sauce, fish sauce, and sugar and close the lid. Continue cooking on the “Soup” function for another 8-10 minutes. Open the lid and add the remaining ingredients: the bok choy, prawns and noodles and close the lid. Continue cooking for another 5-8 minutes until the prawns and vegetables are tender.
- Ladle soup into bowls and garnish with sliced red chilli, coriander and a lime wedge.
