Ingredients

  • 2 tbsp vegetable oil
  • 2 garlic cloves, minced
  • Knob of ginger, minced
  • 2 green onions, sliced
  • ¼ cup red curry paste
  • 1 x 270 ml can coconut milk
  • 1L chicken stock
  • 2 tbsp soy sauce
  • 2 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1 bunch baby bok choy, quartered
  • 300g green prawns
  • 250g rice noodles or udon noodles
  • 1 red chilli, sliced
  • 1 bunch coriander, chopped
  • 1 lime, quartered

Method

  1. Add oil, garlic, ginger and green onions to the bowl of your Tefal Rice Master & Slow Cooker RK818. Close the lid and select “Soup”, then press “Start” button to start cooking. The rice cooker will take about 5-6 minutes to heat up the bowl and start lightly browning the ingredients. Open the lid and add the curry paste, stirring to combine for another minute.
  2. Add the coconut milk, chicken stock, soy sauce, fish sauce, and sugar and close the lid. Continue cooking on the “Soup” function for another 8-10 minutes. Open the lid and add the remaining ingredients: the bok choy, prawns and noodles and close the lid. Continue cooking for another 5-8 minutes until the prawns and vegetables are tender.
  3. Ladle soup into bowls and garnish with sliced red chilli, coriander and a lime wedge.
