Crispy Lime & Ginger Barramundi

Whole barramundi infused with lime, ginger and coriander, air-fried till crispy. Flaky, fragrant and irresistibly aromatic.

Ingredients

  • 1 whole Barramundi (or snapper) ~700-800 grams
  • 1 lime, sliced
  • 1 large knob ginger, sliced
  • 1 bunch green onions
  • 1 bunch coriander (slice bunch in half
    keeping stalks separate from leaves)
  • 1 red chilli, finely sliced

Marinade:

  • 1 tbsp light soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp dark soy sauce
  • 1 tbsp rice wine
  • 1/2 tsp caster sugar
  • 1 large garlic clove, minced
  • 1 small piece of ginger, peeled and grated

Method

  1. Wash the fish very well under cold running water and dry with paper towels. Use sharp kitchen scissors to cut the tail, dorsal and fins. Score the flesh of the fish 3-4 times on each side.
  2. Place the sliced green onions in the tray of your Tefal Easy Fry & Pizza air fryer; this serves as a "bed" for the fish. Place the fish on the top of the onions and fill cavity With the sliced lime, ginger and coriander stalks.
  3. In a glass mixing jug whisk together the marinade ingredients and pour over the barramundi.
  4. Set the manual temperature to 180°C for 20 minutes flipping the fish half way through the cooking (very
    carefully using two spatulas). Once program is finished, spray the fish with cooking spray and cook for 1 more minute at 200°C until golden and crispy.
  5. When cooking is complete, transfer fish to platter and garnish with sliced chilli, chopped coriander and lime slices. Serve with white rice.
