Crispy Potato Skins

Ingredients
- 4 large washed potatoes
- 1 cup grated tasty cheese
- 4 rashes of bacon fried crispy and diced
Method
- Bake the potatoes in your air fryer at 190°C for an hour then set aside to cool.
- When cool enough to handle, cut each potato into quarters longways and remove the flesh (you can use this for gnocchi, mashed potatoes or hash browns).
- Place the skins, skins side down in the air fryer, spray with olive oil and fry at 200°C for 4 minutes.
- Remove the tray, sprinkle with cheese and bacon bits and return to the air fryer until the cheese is bubbling.
- Serve with chopped chives and sour cream.
Tips: For a vegetarian option, omit the bacon.
