Honey Glazed Roast Pork with Walnut & Sweet Potato Puree

Sweet meets savoury in this dish that looks as good as it tastes. Succulent honey glazed pork, complemented by fluffy and earthy walnut and sweet potato puree.

Ingredients

  • 60 g honey
  • 6 cl orange juice
  • 130 g brown sugar
  • 4 cloves
  • 1 roast pork (700g), fat on
  • 1 tbsp vegetable oil
  • 600 g peeled sweet potatoes
  • 10 cl single cream 30% fat
  • 2 cl olive oil
  • 3 g flower of salt
  • 0.5 orange zest
  • 0.5 lime juice
  • 30 g roasted walnuts

Method

  1. To make the marinade, pour all the ingredients into a saucepan. Cook over a low heat while stirring until you obtain a very thick syrup. Set aside.
  2. Prepare the roast. Spread the oil over the meat then, using a sharp knife, make slashes in the fat.
  3. Cook the sweet potato in a pan of salted water. Drain and pour into a narrow container. Add the cream, oil, salt, orange and juice. Blend with an immersion blender until you have a smooth, firm purée. You can make this preparation in advance.
  4. Turn on drawer 1 of your Tefal Dual Drawer Air Fryer. Place the roast in the appliance fitted with the plate and cook for 55min at 170°C. After 30 minutes, spread 3 tablespoons of marinade over the fat and repeat the operation 3 times every 5 minutes.
  5. Turn on drawer 2 of your air fryer. Pour the purée and nuts into the bowl and set to cook for 10min at 140°C.
  6. Press SYNC to finish cooking at the same time. Press START to start the cooking process.
  7. Recover the cooking juices. Slice the roast and serve with the purée.
