Japanese Pork & Veggie Udon Noodle Stir Fry

Juicy pork, crisp veggies & chewy udon noodles tossed in a rich, glossy sauce. Quick, satisfying and packed with Japanese-inspired flavour.

Ingredients

  • 2-3 garlic cloves, minced
  • Knob of ginger, grated
  • 2 tbsp peanut oil
  • 800 g pork (or chicken) mince
  • 1 small wombok cabbage, sliced
  • 1 large broccoli, cut in florets
  • 2 small bok choy, sliced
  • 2 tbsp toasted sesame seeds
  • 2-3 green onions, finely sliced
  • 6 udon noodle nests, thawed from frozen

For the sauce whisk together:

  • 1 tbsp dark soy
  • 1 tbsp tamari or regular soy sauce
  • 1 tbsp mirin
  • 1 tbsp sake
  • 1 tbsp corn flour
  • 1 tsp sesame oil
  • 1 tsp sugar

Method

  1. Turn the dial on the Tefal Easy Banquet Electric Frypan to medium. Add the peanut oil and then saute the garlic and ginger until fragrant.
  2. Add the minced pork, breaking it up and browning for about 2-3 minutes.
  3. Add all the vegetables and mix well. Frying for another two minutes.
  4. Add the thawed udon noddles. Mix in with the pork and vegetables.
  5. Add the sauce, it will thicken with the water that is released from the vegetables.
  6. Stir fry for another 2 minutes until everything is mixed well.
  7. Lower the heat to low and place the glass lid on the frypan. Simmer for another 2-3 minutes until vegetables are cooked.
  8. Once cooking is complete, turn off the stove plusnve and serve noodle stirfry into bowls and garnish with sliced green onions and toasted sesame seeds.
