Parmesan Bread Bites

Ingredients
- 1 quick pizza dough
- 50 g extra-fine semolina or spolvero (for dusting)
- 350 g liquid honey
- 1 dried bird’s eye chilli pepper
- 1 tbsp cider vinegar
- 100 g butter
- 5 g garlic powder
- 30 g Parmesan
- 1 tbsp chopped fresh parsley
Method
- Make the quick pizza dough recipe.
- Chop the chilli into small pieces. Add them to a saucepan with the honey. Bring to the boil then turn off the heat. Let the chilli infuse the honey for around ten minutes. Add the vinegar, mix and strain through a fine sieve. Set aside.
- Melt the butter over a low heat and add the garlic powder. Set aside.
- Turn on your oven and let it preheat (about 7 minutes on the highest setting). You need to get the rotating stone up to a temperature of 250°C. Once this temperature has been reached, turn your oven onto the lowest setting.
- Use extra fine semolina (or spolvero) to dust your work surface and the underside of the dough. This will stop the dough sticking to the work surface.
- Roll your dough into a sausage shape. Using a knife, cut the dough sausage into pieces weighing around 20 g each. Using your hands, shape these pieces into 12 balls.
- Place the bread bites in a pie tin with a diameter of less than 30 cm. Brush generously with garlic butter.
- Place the pie tin with the bread bites in the oven and bake for 2 minutes and 30 seconds, turning regularly with the knob on the side of the oven to ensure they cook evenly.
- Take the tin out of the oven using the peel and brush the bread bites again with garlic butter. Add the chopped parsley and grated Parmesan and serve with the spiced honey. Enjoy!
Tips:
- Homemade spiced honey is very popular with pizzaiolos. It goes perfectly with other pizzas: pepperoni pizza, veggie pizza or goat's cheese pizza. Store it in a clean, airtight jar at room temperature.
- You can adjust the spiciness to your taste. You can use fresh chilli or milder chillies, as well as other types of vinegar.
- You can also make this recipe with 48h pizza dough or Neapolitan pizza dough (8h).
- If you have an infrared thermometer, measure the cooking temperature on the rotating stone: 250°C.
