Pineapple Cake

Pineapple Cake
This Pineapple Cake is a moist, easy-to-make treat, baked in an air fryer and topped with a sweet pineapple glaze for a tropical, flavorful dessert.

Ingredients

  • 225g self-raising flour
  • 100g butter
  • 100g caster sugar
  • 230g canned pineapple chunks in juice
  • 1 egg
  • 2 tbsp milk
  • 1 tsp melted butter
  • 1 tbsp pineapple juice
  • 1/2 cup icing sugar

Method

  1. Mix the egg and milk and set aside.
  2. On a separate bowl, combine flour and 100g of butter and mix until the mixture forms a crumb consistency.
  3. Combine the sugar, pineapple and egg mixture and mix it well with a wooden spoon.
  4. Transfer to a greased Tefal Air Fryer Accessory Cake Tin and bake at 170°C for 35 minutes.
  5. While baking, create the glaze by mixing together 1 tsp melted butter, 1 tbsp pineapple juice and ½ cup icing sugar.
  6. Once baked, let rest for 15 minutes before topping with glaze and serving.
