Pork and Fennel Sausage Rolls

Crispy, golden air‑fried pastry wrapped around juicy pork, fennel and soft veggies. Big flavour, fast cook time, perfect sausage rolls every batch.

Ingredients

  • 2 tbsp olive oil
  • 6 garlic cloves, finely chopped
  • 3 tbsp fennel seeds, finely chopped
  • 1 tbsp dried thyme leaves
  • 150 g brown onions, finely chopped
  • 150 g celery, finely chopped
  • 150 g carrots, finely chopped
  • 1.2 kg lean minced pork
  • 100 g dry breadcrumbs
  • 1.5 tbsp salt
  • 1 tbsp ground white pepper
  • 6 sheets puff pastry
  • Egg wash
  • Fennel seeds, for sprinkling (optional)

Method

  1. Heat the oil in a saucepan over medium heat. Add the garlic and cook for 30 seconds. Add the fennel seeds and thyme and stir together for 1 minutes, or until aromatic. Add the onion and celery and cook for 5 minutes, or until the onion has softened. Add the carrots and cook for about 20 minutes, stirring often, until the vegetables are mushy. Remove from the heat and allow to cool.
  2. Put the pork mince into a large bowl and add the cooled vegetables, breadcrumbs, salt and white pepper. Using your hands, mix the meat forcefully for 3 minutes to thoroughly combine (this will also work the protein in the meat).
  3. Divide the filling mixture into six even-sized portions. On a clean work surface, roll each portion out to the length of the pastry sheet. Place each log lengthways in the centre of the pastry and brush one long edge with egg wash. Firmly fold the pastry over, pressing to enclose the log tightly, leaving the ends open.
  4. Cut each roll into 6 pieces. Place on baking trays lined with baking paper, seam side down. Brush the top of each roll with egg wash and sprinkle with fennel seeds, if desired.
  5. Bake in Tefal Easy Fry & Pizza FW4018 air fryer at 200°C for at least 15 mins, or until golden brown.
