Cool, creamy fromage frais topped with silky smoked salmon, zesty lemon and pink peppercorns. An elegant, no-bake pizza perfect for warm days.

Ingredients

  • 1 blind-baked pizza dough
  • 50 g extra-fine semolina or spolvero (for dusting)
  • 150 g cream cheese, e.g. Philadelphia®
  • 1 tbsp chopped chives
  • 100 g smoked salmon slices
  • 30 g red onion, finely chopped (0.25 onion)
  • The zest of a half an organic lemon
  • 1 pinch of ground pink peppercorns
  • 2 tbsp capers
  • 1 drizzle of olive oil

Method

  1. Make the blind-baked pizza dough recipe.
  2. Using a spatula, work the fromage frais until soft. Add the chives. Mix.
  3. Place the blind-baked dough on a serving plate. Spoon the cream into the centre of the pizza. Spread it over the entire pizza. Place the slices of smoked salmon, red onion, lemon zest, pink peppercorns and capers on top. Drizzle over the olive oil in a spiral motion. Slice, serve and enjoy!

Tips: This pizza is best served cold but can also be reheated if you like your salmon cooked. You can substitute the capers with a few rocket leaves and cook the red onion if you prefer.
