Steamed Sundried Tomato Pesto Salmon with Green Beans

Enjoy tender salmon fillets topped with sun-dried tomato pesto, steamed to perfection with fresh green beans. A healthy, flavourful dish garnished with toasted almonds!

Ingredients

  • 2 Salmon fillets, 100-120g each
  • 6 tbsp sundried tomato pesto
  • 2 tsp olive oil
  • 2 tsp lemon juice
  • 6 tsp sun-dried tomato pesto
  • 2 tbsp almond slices, toasted
  • Salt
  • Pepper
  • Sprout garnish, optional

Method

  1. Begin by cutting two 15 x 24 inch sheets of parchment paper. In the centre of each sheet, place 100g of green beans on each sheet, followed by one salmon fillet. Season with a pinch of salt and pepper.
  2. Add 1 tsp of lemon juice and 1 tsp of olive oil onto each fillet. Then spread 3 tsp of sun-dried tomato pesto on each fillet.
  3. Fold each corner of the parchment paper into the centre. Pinching all the corners together, begin to roll then down to seal up the pouch.
  4. Pour about 1 cup of water into the Multicooker, then insert the Steam Basket.
  5. Place the two salmon pouches into the Steam Basket and select the Steam function with food type as Fish. Set timer for 15 minutes. Close the lid and select the Start key.
  6. Once the cooking program has finished, remove the pouches and open. Garnish with toasted almonds. Serve hot.
