Zucchini Fries

These Zucchini Fries are a crispy, healthier alternative to regular fries, coated in a parmesan and breadcrumb mixture, then air-fried for a golden, crunchy snack.

Ingredients

4 zucchini
2 eggs beaten
1/3 cup panko breadcrumbs
1/3 cup finely grated parmesan

Method

Slice the ends off the zucchini. Slice them in half lengthways, and slice in half again. Then, trim to the desired "fry" size.
In a bowl, mix the breadcrumbs and the parmesan.
In another bowl, beat the eggs.
Dip each zucchini fry in the egg, then in the breadcrumbs. Repeat process for all zucchini fries.
Arrange evenly in the air fryer, then fry at 190°C for 12 minutes, or until the crumbs are golden and crunchy.
