Ingredients
- 150g bacon
- 1 Onion
- 5 eggs
- 100g Gluten Free Self-Raising Flour
- 1 tsp GF Baking Powder
- 380g Grated zucchini
- 80g cheddar or tasty cheese (plus a little extra to top)
- 60ml Olive oil
Method
- Finely dice the onion and bacon.
- Heat up a bit of oil in a pan or in your i-Companion. Add the onion and bacon and cook on medium heat until softened. This should take 5 minutes.
- Allow to cool a little bit. In the same pan or i-Companion bowl, add the eggs, flour and baking powder.
- Stir until the mixture is well combined.
- Add the zucchini, the 60 ml of olive oil and grated cheddar. Mix in gently.
- Pour mixture into a lined springform tin, sprinkle with a little extra cheese.
- Bake at 160°C for 30 minutes. Allow to cool for 10 minutes and serve.
