Ingredients

  • 1 whole chicken
  • 4 tbsp Lebanese 7 spice
  • 300mL olive oil
  • 1 carrot, cut into thick chunks
  • 1 swede, cut into thick chunks
  • 4 Chat potatoes
  • Salt and pepper, to taste
  • Green Sauce:
  • 1 large green capsicum, seeds removed
  • 2 long green chilis, seeds removed and chopped
  • 1 large pale green bull horn pepper, seeds removed and chopped
  • 2 limes, juiced and zested
  • ½ cup mayonnaise
  • 1 bunch coriander, washed

Preparation

1. Mix your olive oil, 7 spice, salt and pepper then take half of the spiced oil and mix with your vegetables, and the other with the chicken.

2. Place your vegetables in the bottom of the fryer bowl and place your chicken breast down. Cook for 30mins on 180oC, then flip your bird, cooking for a further 30mins at the same temperature.

3. While you are waiting for your chicken to cook, make your green sauce. Place all the ingredients in a blender and blend until smooth.

4. Once your chicken is cooked, rest for a further 20mins, then carve and serve with vegetables and serve with the green sauce.
