  • 360 g of quinoa
  • 500 ml of vegetable stock
  • 300 g of courgettes cut into small cubes
  • 6 tbsp of olive oil
  • 3 thinly sliced spring onions
  • 300 g of carrots cut into small cubes
  • 1.5 red peppers
  • 90 g of fennel cut into small cubes
  • 30 g of butter
  • Salt and pepper


Prepare the ingredients.

Pour the oil into the pan.

Brown the onions, peppers, carrots and fennel.

Add the quinoa, vegetable stock and courgettes. Season with salt and pepper.

Cooking time: 6 minutes

Add the butter, serve hot or cold.
