1. To prepare the marinade: in a bowl, mix the olive oil, soy sauce, garlic and honey. 2. Season with salt and pepper. Add chopped parsley and mix until combined. 3. Add chicken cubes and vegetables to the marinade. Toss until combined and refrigerate overnight. 4. Thread the chicken cubes and vegetables onto the skewers. 5. Lightly grease the skewers rack with cooking spray and place the skewers. 6. Cook on Grill mode at 200C for 7-10 minutes until chicken chunks are well done.
