Swirls of golden dough filled with rich tomato sauce, gooey mozzarella & fresh basil. Baked to perfection and topped with Parmesan bliss.

Method

  1. Make the quick pizza dough recipe.
  2. Make the authentic Neapolitan pizza sauce recipe.
  3. Use extra fine semolina (or spolvero) to dust your work surface and the top and underside of the dough. Using your rolling pin, roll out the dough into a 30 cm by 20 cm rectangle.
  4. Finely chop the basil. Once the dough is rolled out, top it evenly with the tomato sauce. Sprinkle with grated mozzarella and half the basil (keep the rest for topping at the end). Brush 2 cm around the top edge with water. This will act as a "glue" to prevent the rolled pizzas from falling apart during baking. Roll the dough back on itself, starting at the bottom and working your way up, to make a sausage. Press the ends together to ensure they are properly joined. Cut into 3cm-thick slices using a sharp knife. You should have 12 pizza rolls.
  5. Turn on your oven and let it preheat (about 7 minutes on the highest setting). You need to get the rotating stone up to a temperature of 250°C. Once this temperature has been reached, turn your oven onto the lowest setting.
  6. Generously oil your pie tin. Its diameter should be less than 30 cm. Before placing your pizza rolls in the pie tin, roll them in the extra fine semolina. Place them in the tin spiral-side up.
  7. Place the pie tin in the oven and bake the pizza rolls for around 6 minutes, turning regularly with the knob on the side of the oven to ensure even cooking.
  8. Using the peel, take the tin out of the oven and place your pizza rolls onto a serving plate. Sprinkle with grated Parmesan and fresh basil. Serve and enjoy!

Tips:

  • You can also make this recipe with 48h pizza dough or Neapolitan pizza dough (8h).
  • If you have an infrared thermometer, measure the cooking temperature on the rotating stone: 250°C.
  • Blend the tomato sauce in a blender to make it smoother if needed.
  • or even rolls, avoid overloading the dough with the filling. Serve with a lightly spiced tomato sauce or a sauce of your choice (cheddar, herbs, etc.).
