Baked Bolognese Pancakes
Take two family big hitters, Bolognese & pancakes, add some oozy cheese, heat it up & you're away.

Ingredients
- 1 large egg
- 1 mug of plain
- wholemeal flour (175g)
- 1 mug of milk (350ml)
- 500g A Better Bolognese (see recipe)
- 80g Cheddar cheese
- 1/2 x 460g jar of roasted peppers
- 1/2 a bunch of fresh basil (15g)
Method
- Preheat the oven to 180°C. To make the pancake batter, whisk the egg into the flour with a pinch of sea salt, then whisk in the milk until smooth.
- Put a 30cm non-stick ovenproof frying pan on a medium heat. Once hot, add a drizzle of olive oil and swirl one quarter of the batter around the pan. Cook for 2 to 3 minutes, or until lightly golden on both sides, remove and repeat, laying the pancakes on a clean work surface as you go.
- Spoon a quarter of the Bolognese across one half of each pancake, then crumble or grate over the cheese. Drain, roughly slice and add the peppers, tear over most of the
basil leaves, then fold each pancake into quarters and place back in the pan (like you see in the picture). - Bake for 25 minutes, or until golden and crisp. Serve sprinkled with the remaining basil
leaves. Nice with a salad.
