Ingredients

  • 4 chicken breasts
  • 8 bacon slices
  • 3 tablespoons mayonnaise
  • 3 tablespoons olive oil
  • 1 garlic clove, crushed
  • 1 teaspoon white wine vinegar
  • 2 anchovy fillets (optional)
  • 70g parmesan cheese in shavings
  • 2 small romaine lettuces
  • 2 sandwich bread slices
  • 30g butter, melted
  • Salt and pepper
  • Worcestershire sauce (optional)

Preparation

Turn the grill on. Select the Bacon setting and press OK. Once the grill is preheated, place the bacon into the grill, close the lid and wait until the desired level of crispiness is reached. Set aside on a plate lined with a paper towel to absorb excess fat.

Select the Poultry setting and wait for the grill to preheat. Once the grill is ready, place the chicken breasts inside and wait for the desired cooking level. Set aside on a cutting board and cut into strips.

Brush the bread slices with melted butter on the 2 sides. Sprinkle salt and pepper to taste. Select the Panini setting and press OK. Once the grill is preheated, place the bread slices inside and wait until the desired crispiness. Cut the bread into croutons.

In a small mixer, combine mayonnaise, olive oil, garlic, anchovies (if used), vinegar, salt and pepper and blend until smooth. In a big bowl, place the rinsed and coarsely chopped lettuce. Top with chicken strips, crumbled bacon, croutons and Parmesan shavings. Drizzle the sauce on top.
