Ingredients

  • 1 1/2 cups red lentils or split peas or mung beans
  • ½ cup white basmati rice
  • 2 tbsp good olive oil
  • 2 cloves
  • 3 bay leaves fresh if possible
  • 5 cups water or more
  • 1 tsp ground white peppercorns
  • 1 tsp coriander seed
  • 1 tsp ground cumin
  • 1 tsp fennel seeds
  • 1 tsp ground ginger
  • 1 tsp sea salt
  • 2 tsp black mustard seeds
  • 2 tsp cumin seeds
  • 2 tsp turmeric
  • 3 to 5 cups seasonal vegetables, chopped

Preparation

1. Rinse the lentils and rice thoroughly under cold running water till water runs clear 2. Measure out all spices and cut all vegetables before cooking 3. Add olive oil into the Tefal Eco Respect Stewpot over medium heat along with the spices, and cook for 1-2 minutes until fragrant 4. Add in the rinsed lentils and rice followed by the chopped vegetables. Cover with 5 cups of water and set to cook for 40 to 50 minutes over medium to low heat 5. Once cooked, the kitchari will have a porridge-like consistency and the oil should rise to the top. Add more water if necessary 6. Adjust the seasoning with a little more salt if needed 7. Serve immediately, you can store the remainder once cool in the refrigerator in a sealed container for up to 5 days
