Ingredients

  • 1 tbsp vegetable oil
  • 400g pork mince
  • 4 cloves garlic, finely chopped
  • 1 long red chilli, finely chopped
  • 1 bunch Thai basil, leaves picked
  • 3 tbsp oyster sauce
  • 1 tsp caster sugar
  • 4 fried eggs
  • 1 handful of toasted and chopped peanuts
  • Steamed jasmine rice, to serve
  • Nuoc mam:
  • 2 tbsp fish sauce
  • Juice of 1 lime
  • 2 tbsp caster sugar
  • 1 small red chilli, finely chopped

For the nuoc mam dressing combine all ingredients and put to the side.

Heat the wok over high heat and add the oil and then the garlic and chilli followed by the mince. Break it up with a wooden spoon and once it starts to colour, add the oyster sauce and sugar. Toss to completely coat the meat then add the basil and remove off heat.

Serve mince stir-fry on top of rice with a fried egg on top and dressing on the side.
