Mix the yeast and warm water together in a bowl to activate the yeast
After a few minutes, add the flour, salt and olive oil to the bowl and mix
Knead for 5 minutes then cover and allow the dough to proof and double in size. This should take 45-60 minutes
Now split the dough in two and roll each piece into a 40cm rounds
Spread the ricotta on one half of each dough circle
Add pizza sauce, cheese and toppings on top of the ricotta
Gently fold the dough in half and seal the edges all around
Brush with olive oil and place in the Pizza tray
Bake calzones at 200 ̊C for 12 minutes
Let it cool for 5 minutes, then serve.
