Ingredients

  • 4 chicken thigh fillets, diced
  • 1 tbsp olive oil
  • 200g diced onion
  • 1 tbsp olive oil
  • 3 tbsp basil pesto
  • 300g Arborio rice
  • 750ml Chicken stock
  • ½ cup grated parmesan
  • 10 cherry tomatoes, quartered
  • Handful of baby spinach leaves
  • Salt and pepper

1. Install the mixer attachment to the i-Companion XL 2. Pour the olive oil and brown the seasoned chicken in oil (in two batches). Start Slow Cook P1. 3. Once the program is done, set the chicken aside and swap the mixer for the Ultra Blade attachment. Add the onion and second amount of olive oil. Set at Speed 10 for 20 seconds 4. Swap the blade for the mixer and start Slow Cook P1 for 4 minutes 5. Add the pesto and arborio rice and start Slow Cook P1 for 1 minute 6. Add the stock and set to Slow Cook P3 for 22 minutes 7. Add the spinach, parmesan and tomato and mix in well, then set at Speed 3 for 3 minutes at 70 ̊C
