  • 300 g of arborio rice for risotto
  • 90 g of shallot, finely chopped
  • 6 tbsp of olive oil
  • 600 ml of water
  • 90 ml of white wine
  • 300 g of chanterelles (cut in half)
  • 3 tbsp of mascarpone
  • 3 tbsp of grated parmesan cheese
  • Salt and pepper
  • 1.5 tbsp of parsley, chopped


Prepare the ingredients.

Pour half the oil into the pan.

Brown the chanterelles in the oil. Remove. Pour in the rest of the oil, add the rice and the shallot. Mix until rice turns brown.

Add the water, white wine and the chanterelles. Season.

Cooking time: 6 minutes

Add the mascarpone. Stir. End with parmesan and parsley.
