  • 600 g tomatoes, peeled and quartered
  • 150 g white onion, peeled and chopped
  • 3 garlic cloves, peeled and degermed
  • 150 g red pepper, peeled, deseeded and diced
  • 3 slices of white bread, crusts cut off
  • 3 tbsp sherry vinegar
  • 18 fresh basil leaves
  • 3 tsp sugar
  • 900 ml water
  • High quality olive oil



Prepare the ingredients.

Peel and cut the white onions into pieces.

Peel and degerm the garlic cloves.

Peel and deseed the red pepper. Then dice.

Put all the ingredients except the basil in the pan. Season with salt and pepper.

Pressure Cooking time: 5 minutes

Blend finely.

Drink hot or chilled, seasoned with basil and olive oil.
