  • 120 g of green olives, pitted roughly chopped
  • 120 g of ham, chopped into small cubes (or chopped slices)
  • 3 medium-sized eggs (50/55 g)
  • 225 g of flour
  • 15 g of baking powder
  • 225 g of ricotta
  • 3 tbsp of olive oil
  • 6 muffin moulds or a Charlotte cake tin for 6 people


Prepare the ingredients.

Whisk the egg, ricotta and oil. Add the flour and yeast. Add the olives and ham. Mix.

Pour the mixture into the moulds. Pour 20 cl water into the pan. Place the moulds in the basket.

Cooking time: 16 minutes

Leave to cool. Unmould and eat warm with salad.
