  • 9 capsicums (peeled, seeded & cut into strips)
  • 6 tomatoes, chopped into pieces
  • 2 tsp garlic, finely chopped
  • 3 onion(s), thinly sliced
  • 6 tbsp olive oil
  • 3 tsp icing sugar
  • Salt, pepper


Prepare the ingredients.

Pour oil into the pot. Add onions and sugar, cook until caramelised.

Add the tomatoes. Fry on low temperature. Set aside.

Brown the capsicums. Add the caramelised onions and tomatoes. Season with salt and pepper then stir well to combine.

Pressure Cooking Time: 7 mins.

Serve and enjoy!
