Prepare the ingredients.
In a large mixing bowl, whisk together egg yolks, thickened cream, salt, pepper, and nutmeg. Add potatoes and mash well. Stir in shredded cheese.
In a small separate bowl, beat the egg whites with the sugar until they form peaks and gently fold them in.
Pour mixture in the cake pan. Pour 1 cup of water in the bowl and place the cake pan in the bowl.
Pressure cooking time: 25 mins on high pressure cooking or 18 mins express cooking.
Let it rest for 5 min before removing from the cake pan. Serve with a green salad.
