  • 2 egg yolks
  • 4 egg whites
  • 100 g sugar
  • 120 ml milk
  • 180 g flour
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 50 g butter

1. Whisk together the egg yolks and sugar until the mixture is blanched. Add the milk, vanilla, flour and baking powder.

2. Beat the egg whites until stiff peaks form, then fold into the previous mixture with a spatula.

3. Heat a pan over low heat and place a greased pastry ring mould in the center. Pour until it reaches ¾ of the ring mould. Cover the pan and let cook for 5 minutes, then flip it over and cook for 2 minutes on the other side.

Tip: Drizzle with maple syrup just before serving.
