1. Cook the quinoa in an Ingenio pot in salted water for 10-15 minutes, drain.
2. Let cool and add the garnish: de-seeded pomegranate, lemon juice, olive oil, dried cranberries, diced cucumber, diced red onion, sunflower seeds.
3. Refrigerate and when ready to serve, add avocado and toss in the fresh herbs.
