  • 1kg chicken mince
  • ½ cup almond meal
  • 1½ tsp dried oregano
  • 1 tsp sugar
  • Pinch of salt
  • 2 eggs, whisked
  • Olive oil spray
  • Coating
  • 1 tsp onion powder
  • ½ tsp garlic powder
  • Pinch of Chinese five spice
  • ¾ cup rice flour
  • ¼ cup potato flour
  • ½ cup tapioca flour

1. Combine the coating ingredients in a large bowl with a pinch of salt. 2. In another bowl, combine the chicken mince with almond meal, dried oregano, sugar and a good pinch of salt. Using a tablespoon measure, make round meatballs and flatten slightly. 3. Dip the chicken into the egg wash and then the coating mixture. Place on a flat tray and then lightly spray with oil. 4. Arrange nuggets in one single layer in the basket of the air fryer and cook for 7 - 15 minutes at 200°C.
