Ingredients

  • 110g Pitted dates
  • 100ml water
  • 1 tsp bicarb
  • 3 eggs
  • 2 mashed bananas
  • ¼ cup honey
  • ¼ cup almond milk
  • 60g vanilla protein powder
  • 2 cups almond meal
  • 2 tsp baking powder
  • 1/3 cup chopped walnuts
  • 1/3 cup desiccated coconut
  • 1 tsp cinnamon
  • ½ tsp ground ginger
  • Pinch of salt

1. Install the Ultra blade 2. Add the dates, water and bicarb. Set at Speed 2 for 5 mins at 90 ̊C 3. Swap the Ultra Blade for the Kneading and Crushing blade 4. Add the eggs, banana, honey and almond milk. Set at Speed 4 for 1 minute then Speed 8 for 10 seconds 5. Now add the remaining ingredients. Set at Speed 4 for 2 minutes 6. Pour into a lined loaf tin and top with 1 banana sliced lengthways and a sprinkle of extra chopped walnuts 7. Bake at 170 ̊C for 50 minutes then allow to cool for 10 minutes
