Ingredients

  • 4 white fish fillets (such as barramundi)
  • 2 large onions, thinly sliced
  • 4 garlic cloves, minced
  • 1 can of tomatoes
  • 1/4 cup white wine (optional)
  • 2 tbsp tomato paste
  • 2 tbsp olive oil
  • 1 tbsp dried oregano
  • Salt and pepper to taste
  • Lemon wedges, for marinating the fish

1. Preheat the oven to 190°C. In a large Tefal Ingenio pan, heat the olive oil over medium heat. 2. Add the sliced onions and sauté for 5-7 minutes, until they are softened and lightly browned. 3. Add the minced garlic to the skillet and sauté for another 1-2 minutes, until fragrant. Add the can of diced tomatoes (with the juice), tomato paste, white wine, oregano, salt, and pepper to the skillet. 4. Stir to combine. Simmer the tomato sauce for 10-15 minutes, until it has thickened slightly. In the meantime, drizzle the lemon juice over the fish. 5. Add the fish fillets to the tomato sauce, making sure each fillet is coated in the sauce. Place the Tefal Ingenio into the oven. 6. Bake the fish for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork. 7. Serve the fish hot, with potato mash and your choice of vegetables and enjoy.
