Ingredients

  • 1 tsp extra virgin olive oil
  • 2 x 180g sirloin steaks
  • 1 brown onion, sliced
  • 1 tsp red wine vinegar
  • 4 tbsp good quality bbq sauce
  • 2 tbsp aioli or mayonnaise
  • 1 large handful of rocket (or lettuce) leaves
  • 2 ciabatta rolls
  • Salt and pepper

1. Heat a grill pan over a high heat. Place the steaks between two pieces of baking paper and, using a meat mallet pound to thin out. Spread oil over each side of the steak and season with salt and pepper. 2. Add ½ onion to one side of the pan and add a splash of oil and a pinch of salt. Toss regularly until caramelised, add a splash of vinegar. 3. To the other side of the pan add the steaks and grill for a minute on each side (or longer if you prefer it more cooked). Rest the steaks for a few minutes and remove the onions. 4. Cut the rolls in half and grill on the cut side for a minute. Spread BBQ sauce on one side and aioli on the other. Top with the steak, onions and rocket. Sandwich together and serve.
