1. Place the egg yolk, mustard and vinegar into the bowl fitted with the whisk. Season with salt and pepper. Launch at speed 7 and gradually pour in the oil. Once the mayonnaise is ready, stop the machine.
2. Add Greek yogurt and mix at speed 7 for 30 seconds to 1 minute.
3. Refrigerate until ready to use.
