Ingredients

  • 4 boneless chicken breasts
  • 4 tbsp of olive oil
  • 1 medium onion, peeled and chopped
  • 28 oz can of canned crushed tomatoes
  • 2 tbsp of tomato paste
  • 4 tbsp of red wine vinegar
  • 1 cup of dry white wine
  • 1/4 cup of capers, drained
  • Salt and black pepper
  • 2 tbsp of chopped parsley, for garnish

Preparation

Prepare the ingredients.

Preheat pot. Add oil. Season chicken with salt and pepper.

Brown chicken for 4 minutes on each side. Add onions and garlic; cook for 2 minutes.

Add remaining ingredients. Stir well to combine.

Cooking under pressure : 10 min.

Adjust seasonings to taste. Garnish with parsley.
