Ingredients

  • monkfish (4 pieces with the skin removed)
  • button mushrooms (300 g)
  • 5 potatoes (500 g)
  • 2 carrots (150 g)
  • 2 shallots (80 g)
  • 1 leek, sliced (100 g)
  • 2 bay leaves
  • white wine (100 ml)
  • water (300 ml)
  • 3 tbsp olive oil
  • 3 pinches of salt

Preparation

Have you checked the valves ? See FAQ. Peel, wash and cut the vegetables finely. In the open pressure cooker, sweat the shallots, leek and carrots in olive oil without browning. Add white wine, water, bay leaf, mushrooms and salt. Alcohol vapours are flammable. Bring to a boil for about 2 minutes without closing the lid. Put the potatoes in the steam basket. Position the steam basket in the pressure cooker. Close the lid. As soon as the steam is released, reduce the heat source and leave it to cook for the indicated time. During cooking, check that the valve murmurs regularly. Open, put the potatoes in a mixing bowl and mash with a drizzle of olive oil; season, if necessary. Put the monkfish in the steam basket, add salt. Position the steam basket in the pressure cooker. Close the lid. As soon as the steam is released, reduce the heat source and leave it to cook for the indicated time. During cooking, check that the valve murmurs regularly. Serve.
