Ingredients

  • 2 cups plain flour
  • 2 1/2 tablespoons sugar
  • 2 teaspoons baking powder
  • 3/4 teaspoons baking soda
  • 1 egg
  • 1 3/4 cups buttermilk
  • 1/3 cup extra-virgin olive oil
  • 1 teaspoon fresh thyme leaves
  • 1/2 cup coconut yoghurt
  • 1/4 cup honey
  • Fresh lemon to serve
  • Good pinch of salt

Preparation

1. In a large bowl mix the flour, sugar, baking powder, baking soda, and salt. Beat in the egg, buttermilk, and olive oil until you have a smooth batter. 2. Heat a little more olive oil in a Crepe Pan over medium-low heat. Pour the batter, spread evenly over the base of the pan, sprinkle with thyme leaves and cook until golden brown. Flip the pancake with a spatula and cook until golden brown on the second side. Repeat until you run out of batter. 3. Transfer the pancake to a serving plate and topped with coconut yoghurt and honey, serve immediately.
