1. Heat the milk, oil, a pinch of salt and a pinch of pepper in a pot over medium heat for 3 minutes or until the milk comes to a simmer. Add the tapioca flour, eggs and Gruyère and stir to combine.
2. Transfer the mixture to a bowl and beat with a mixer for 2 minutes or until slightly cooled and smooth.
3. Line the base of an air fryer basket with baking paper. Scoop out small portions of dough and place them on the baking sheet, allowing 5cm in between each dough.
4. Air fry at 180°C for 15 minutes or until golden brown. Repeat with remaining dough portions. Enjoy while warm.
