Companion Pear, Blue and Brie Flatbread Appetizer Pizzas

Ingredients

  • 1 small sweet onion
  • 1 1/2 firm ripe pears
  • 2 oz soft Brie cheese
  • 3 Tbsp olive oil, divided
  • 1 Tbsp butter
  • 1 tsp brown sugar
  • 2 1/4 cups all-purpose flour
  • 1 pkg dry yeast
  • 1 tsp sugar
  • 1/2 tsp salt
  • 2/3 cup water cornmeal
  • 2 oz crumbled blue cheese
  • 3 Tbsp leaves fresh sage

Preparation

1. Peel and cut the onion in half lengthwise; thinly slice crosswise. Core the pears; thinly slice pears and brie. Place onion, 2 Tbsp. olive oil, butter and brown sugar in the bowl fitted with mixer. Launch the P1 simmer program for 15 minutes, without the stopper. Remove; wash the Prep&Cook bowl. Put flour, yeast, sugar, salt, 1 Tbsp. olive oil and water in the bowl fitted with the kneading/crushing blade. Launch the P1 pastry program. Be careful to leave the dough in the machine to rise for the next 40 minutes of the program.

2. At the end of the program, place a large cookie sheet in the oven and heat the oven to 450°F. Place the dough on a floured surface and knead briefly until smooth. Divide dough into 3 pieces and roll each piece into a 4 x 12-inch rectangle. Cover a cool cookie sheet with parchment paper and generously sprinkle with cornmeal.

3. Place crusts on the cornmeal. Spread the onion mixture over the crusts and sprinkle with pepper. Top with brie, blue cheese, pears and sage. When the oven is heated, slide pizzas onto the heated cookie sheet. Bake for 12-14 minutes or until crust is a deep golden brown and the top is bubbly.
