Ingredients

  • 500g of chicken thigh fillets (skin off), diced
  • 1 tbsp extra virgin olive oil
  • 2 garlic cloves, minced
  • 1 tsp sesame oil
  • 1 tbsp soy sauce
  • 1 tsp chilli flakes
  • 1 tbsp roasted sesame seeds
  • 1 tsp of honey
  • 1 can baby corn, rinsed and drained and cut in half
  • 10 broccoli florets - aim for small/medium-sized
  • 10 green beans, top, tailed and cut in half
  • Brown rice, to serve
  • Lime wedges, to serve
  • ½ cup coriander, to serve

1. Heat the olive oil in a frying pan. 2. Add the garlic, allow it to become fragrant and then add the chicken – ensure browned all over. 3. Add baby corn, broccoli and green beans and toss to combine. 4. After 2-3 minutes add the soy sauce, sesame oil and honey to the pan and allow to gently simmer for another 5 minutes. 5. In a bowl place brown rice – top with the chicken and sprinkle toasted sesame seeds, chilli flakes and coriander on top to serve.
