Ingredients

  • 1 whole chicken, butterflied
  • 2 tbsp smoked paprika
  • 1 tbsp chicken salt
  • ¼ cup extra virgin olive oil
  • 1-2 tbs ready made harissa
  • 1-2 cups hummus dip
  • 1 bunch flat leaf parsley, roughly chopped
  • 1/2 red onion, sliced
  • 1-2 tsp sumac
  • 1 lemon, juiced
  • Salt to taste

1. Pre-heat the OptiGrill Elite on the manual setting to 180 degrees. 2. In a medium bowl, mix together the smoked paprika, chicken salt and extra virgin olive oil. Add butterflied chicken and rub the marinade all over the chicken. 3. When the machine is ready, place chicken on the grill plates and set the timer to one hour. 4. In a small bowl combine hummus and harissa. Set aside until needed. 5. To make parsley and onion salad, place parsley, onion, sumac and lemon juice in a small bowl. Toss to combine. Add salt to taste. 6. To serve, spread hummus and harissa dip on a family-sized serving platter, place grilled chicken on top, then top with parsley and onion salad. Drizzle with some of the chicken fat and marinade that has been caught in the drip tray. Serve while warm
