Ingredients

  • 4 corn cobs (fresh)
  • For the mixed herb salsa
  • ½ cup mint, leaves picked
  • ½ cup parsley, stalks removed
  • ½ cup coriander, stalks removed
  • ¼ cup dill, picked
  • ½ cup shallots, roughly chopped
  • 2 garlic cloves
  • 1 birds eye chili (optional)
  • Zest and juice of 1 lemon
  • 1 cup extra virgin olive oil
  • Salt, to taste
  • Labneh, to serve

1. Prepare corn if required by removing husks. Place in Easy Fry Grill and Steam using the grill plate and set to Steam function for 3 mins.

2. Once the steam program is complete, select the grill function and grill corn for approximately 12 mins or until a char is achieved.

3. Meanwhile, to make the mixed salsa, place all the ingredients into a food processor and blend until slightly chunky salsa is achieved.

4. To serve, spread labneh at the base of your serving plate, top with corn cobs and spoon mixed salsa on the corn, drizzle a little more extra virgin olive oil if desired and serve.
